Crock Pot Stuffed Peppers

Crock Pot Stuffed Peppers



2 pounds ground pork
4-6 large green peppers (My crockpot will hold 6)

1 large onion
2 carrots, chopped finely
4 cloves of garlic
2 cups instant white rice
6 ounce can of tomato paste
1 tablespoon dry oregano
1 tablespoon dry or fresh tarragon
Salt and pepper to taste
Cut the top off the peppers, clean out the seeds and rinse. Set these aside.
Combine the rest of the ingredients.  Pack the peppers with the pork mixture. If you have extra, either freeze for use later, or pack the meat around the peppers in the crock pot. Add 1/2 cup water to the crockpot and cook on low for 8-10 hours with the lid on. Don't peek! Every time you lift the cover of your crockpot you add 20 minutes to the cook time. So resist the urge! Even if you're cooking on low heat and you swear it needs a stir...resist! It will be worth it!
