Meatballs!

Meatballs! (yes, these get an exclamation of their own)






1 pound ground beef
1 pound ground turkey
1 pound ground pork



1 finely chopped onion
2 cloves garlic, chopped
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
3 tablespoons tomato paste
1/8 cup milk (more or less as needed)
2 tbsp Oregano
1 tbsp Basil
salt and pepper to taste


This is one of those self explanatory recipes. Get ingredients, smoosh together, make into about 1 inch meatballs. Line a sheet tray with parchment, bake 15-20 mins at 350 or until done. Let them cool, then store in an air-tight freezer bag. Label and toss to the back of your freezer. I say back, because if we see these, we use them too fast.  Use Meatballs! for pasta dishes, reheat with a red sauce and either top pasta or, one of our favoritesmeatball subs topped with fresh mozzarella and parmesan.
*Just a note on parchment paper. I don't always use parchment paper. However, when I do a big day of baking, I need my sheet trays constantly. Not only for baking, but for laying baggies onto then freezing, (makes the bottoms flat and easier to stack and store). Individually freezing small things before storing in one large bag, like cookie dough portions.
